Falafel Salad (halfway homemade)

My roommate / bestie Leonie is the main cook of our household and really has the best ideas (+ It always tastes good !!). Like every student we wanted something quick and easy but still healthy. Okay, only the quick and easy part is agreeable with every student out there. My cousin makes the best Falafels and parsley salad but this one comes pretty close. Let's dig in!


2 plates: 

  1. Falafel mix
  2. 3 middle sized tomatoes (chopped in small cubes)
  3. 1 1/2 middle sized cucumber (also chopped in small cubes) 
  4. A hand full of parsley 
  5. 1/2 juice of half a lemon 
  6. 1-2 tbsp Olive Oil 
  7. Salt & Pepper
  8. Vegan feta (optional) 


We still had this mix at home which is super fast. Making falafels yourself is definitely cooler but this one is the lazy student version. hehe. 


Cut all the veggies into small cubes and just add the chopped parsley, lemon juice and olive oil. Season with salt and pepper and garnish with your falafel balls. Add vegan feta if you are into it - enjoy :)
